Asheville Herb Festival Fuels my Basil Pesto Extravaganza

One of the most wonderful weekends to be found in our Asheville hamlet is the Plant/Herb Sale, AKA Growin Wild in Western North Carolina at the Farmer’s Market.  The Asheville Herb Festival fuels my Basil Pesto extravaganza every year. Basil will only be a small part of the herbs, plants, accessories etc. that will be available at this sale.  The home gardener can usually find anything from pineapple sage; one of my special favorites to chocolate mint, johnny jump ups and everything in between.  There will be vines, japanese maples, fresh produce and more.  It is such a wonderful, joyful, out in the air entertainment! Happy dogs on lead, some music playing and joyful excitement is tangible as those gardeners who have been “holed up” all winter long finally get back to growing things again.  Come out to the Framer’s Market and join us and if that is simply not possible enjoy this recipe that I often make for weddings at our Asheville Bed and Breakfast Inn

At Cumberland Falls Bed and Breakfast Inn Basil Pesto

3 cups chopped fresh basil
1 cup extra virgin olive oil
1/2 cup pine nuts
1/8 cup walnuts
2/3 cup fresh grated parmesan
2 T. minced garlic
1/2 tsp. chili powder
1/8 tsp black pepper
1/8 tsp. salt
1/4 tsp. coriander

Place the basil in your blender. Instill 1 T. of the oil and blend basil into a paste  Gradually add in the pine nuts, walnuts, cheese, all spices and remaining oil.   Continue to blend till smooth. 
Things I have used this on.  Bread, pasta, filling for shells or mixed in veggies for extra flavor.  I have also added it to vinegar and oil to enhance the flavor of a salad dressing.  Wherever you put it….You will love it there.
